    櫻花 近日工作十分不如意,為了紓緩壓力,與好友到中環品嘗omakase。真喜歡坐在壽司吧枱與廚師交流食物與食材,增長知識。 蘭桂坊到的概念是飲酒的地方,難得在這裡也能找到一間高水準的日式餐廳,看着廚師全神貫注,為我們預備食材真是賞心樂事。每一道菜,廚師細心而詳細的為我們作介紹,令我對食材有更深的認識。 餐廳除咗供應壽司,也有鐵板燒。鐵板燒的地方,自成一角,可以分間做兩個私人的空間,每間房可容納六。七人。私隱度極高。 omakase Hana set $1280 餐前小食: 鱈魚片 餐廳非常貼心,在我們享用正餐錢,特意送上他們自家製的鱈魚片。鱈魚片烘得超香脆,與平常吃的絕對不同的口感,有魚鮮味不乾也不會太焦。 前菜 蟹味噌荔芋 蟹味噌味道超鮮味,一般可以撈白飯或炒飯,也會放在味噌湯內,增加鮮味。首次嘗到與荔芋同吃,感覺特別。荔芋呈現一個球體嘅狀態,很別緻,本身味道偏淡,配上蟹味噌,增加了鮮味之餘,也不會搶走彼此的味道。 醬油露筍 蘆筍部份很鮮嫩,一點渣也沒有。醬汁非常特別,首先嘗到酸味,其後滲出少許辣味,味道層次豐富。 穴子苗玉子燒 兩件很迷你的玉子燒,煎得很嫩滑。玉子燒內的穴子苗,是我第一次吃到的食材。壽司店提供的則是海鰻,稱為「穴子」,在海生長的叫『穴子』,在淡水的才叫『鰻』,但在香港統統都叫做『鰻魚』,口感滑溜。 刺身5點 九洲長畸小長井生蠔 這款生蠔,在夏天這個季節來說,已是非常肥美。入口creamy,先嘗到醬油的味道,然後嘗到微微的柚子鮮味,味道清新。 太刀魚(配淡雪塩) 很喜歡這個刺身,就像一件藝術品,兩件切得平均的太刀魚重疊在充滿和風的碟子上,魚肉口感結實,魚的外皮被廚師稍稍用火槍燒過,帶有少許的焦香。一片片淡雪塩,非常薄身,味道沒有一般海鹽的鹹味。 毛蟹配蟹醋 一梳梳的毛蟹蒸熟後再人手拆肉,蟹肉鮮甜,配上蟹醋也是不同的配搭,帶出蟹肉的鮮味,令蟹肉更加鮮甜。 螢光魷魚 帶點爽口,不過瞬間滑進喉嚨。 汁煮鮑魚 鮑魚真係非常厚身,當廚師將剛剛煮熟的鮑魚放在我們的眼前時,大家不禁嘩然,因為鮑魚比我的手掌還要大。鮑魚住得非常入味,保留了鮑魚鮮味。好味😋 煙薰拖羅 拖羅呈現半生熟狀態,呈粉紅色嘅狀態。利用櫻花木煙薰有一種特別嘅香氣,端上桌的時候有就好像藝術品一般,掀開碗蓋,一縷縷輕煙徐徐升起,緊接的是櫻花木彌漫在空氣中,飄入鼻中。這個菜式是餐廳的signature,吃了一口真的忍不住大叫三聲:好好味!好好味!好好味!這道菜色最特別之處,除了嗅到櫻花木的香氣,將放入口中,也能嘗到櫻花木的味道。拖羅係我最鍾意嘅刺身之一,油香四溢,入口即溶。拖羅下邊放了新鮮的海帶,除了賣相精美,亦增加口感。 壽司7貫 。平靜魚 肉質爽口 。金目鯛 個人偏愛白身魚,特別是油脂豐富的魚,魚油透着甘醇芳香,綿密悠長。 春子鯛 春子鯛帶有鮮味和幼魚獨特的軟身肉質。肉質鮮嫩,肉質帶點黏性,味道比較清爽。其實春子鯛是鯛魚的幼魚,是春天的時令魚,在這個季節食也相對地比較恰當。春子鯛的淺粉紅色的魚皮,配上白色魚肉,壽司師傅特別保留其魚皮,用了是江戶前壽司的傳統做法,以特別的刀法切春子鯛肉,表面上界上不同的花紋,經過醋浸後製作握壽司,賣相味道俱佳。 此外還有:梳子魚、赤睦魚、白海膽
 湯 大蜆湯 甜品 水信玄餅 呢個甜品好靚呀,因為中間仲有幾片金箔,底部有黑糖,食嘅時候仲可以灑上黃豆粉。

    you cannot miss this omakase. what you will enjoy is the seasonal food. the best quality on that day. staff is friendly and willing to explain all the dish detail. spacious seating, love to have a quite Saturday night. the signature dish is smoke Toro. that's amazing. rich of flavour and really enjoy the taste this restaurant opened in March 2018. still new but you will feel warm when you enjoying the food. if you think dinner is over budget. may try lunch around 300 hkd per person.

    Very Nice and Cozy Japanese Restaurants just opened in Central I usually go there for lunch because the price is more reasonable They do have omasake for dinner as well I love sushi so I always go there for a relaxing lunch Besides Sushi, they do have tenpanyaki and also you can book private room if you have a group of people.
